- ○10Calabrian Cured Chilis in Oil(minced)
- ○1 cuptomatoes(diced)
- ○3sweet frying peppers(sliced)
- ○1lemon juice(juice of)
- ○1lemon zest(zest of)

- ○3Cantabrian Anchovies(minced)

- ○extra virgin olive oil(your favorite)
Instructions
- Dice 1 cup tomatoes (Heirlooms or Sungolds preferred).
- Mince 10 Calabrian Cured Chilis in Oil.
- Mince 3 Cantabrian Anchovies.
- Zest 1 lemon.
- Slice 3 sweet frying peppers (Cubanelle, escamillo, cornito - if using smaller peppers slice more).
- Combine all ingredients in a tupperware or mason jar.
- Juice the lemon you zested.
- Add a generous helping of your favorite EVOO.
- Put the lid on the tupperware and shake vigorously until the liquid takes on a nice yellow/red hue.
- Refrigerate and enjoy. It will be delicious immediately, but even better after a few hours.
My notes
This sauce can be used as a dressing for Panzanella Salad, brushed on grilled chicken, added to pasta, or put on grilled bread with a little stracciatella.
