Carrot Cake-like Oatmeal

- ○1Granny Smith apple(minced)

Instructions
- Bring one cup of steel cut oats and roughly five cups of filtered water to a rapid boil; stir and then cover the pot and remove it from the heat.
- Five minutes later, stir the mix and bring it back up to another rolling boil; then off heat once more.
- After another five minute rest, add a large shredded carrot, a large fistful of raisins, a fistful of minced walnuts, and a large minced Granny Smith apple.
- Bring it back to a bubbling state.
- Cover the pot, continue on and off heat until it reaches the desired consistency.
- Note: Initially, it will seem quite wet, but over time, it will thicken. It can be kept on very low heat for another 10 minutes to thicken, if desired.
- The oatmeal freezes easily and returns to normal with a day in the fridge.
