Herbal Pork Jiǎozi

Ingredients

  • 1/4cabbage(finely shredded)
  • 1 largecarrot(shredded)
  • 1 bunchscallions(chopped)
  • 1 bunchcilantro(chopped)
  • 2garlic(minced)
  • 1 knobginger(minced)

  • 8 ozground pork

  • 25 rounddumpling wrappers
pantry staple
  • 1/2 tspkosher salt(plus more to taste)
  • 1 tspsesame oil

Instructions

  1. Add cabbage and pinch salt to large bowl and massage. Set aside for 30 minutes.
  2. Wring cabbage of extra water. Add pork, carrot, herbs and aromatics. Combine and add kosher salt and sesame oil.
  3. Test the seasoning by pinching off a tablespoon of the mixture and pan frying 3-4 minutes until golden and crisp and then tasting. Now is when you adjust the seasoning of the mixture if you want more salt or aromatics.
  4. Spoon a small amount of the mixture into the center of dumpling wrapper (about 2 tsp worth). Dab the edges of the wrapper with water and pinch the edges shut to seal.
  5. Pan fry 8 to 10 at a time over medium heat in vegetable oil until deeply golden, about 3-4 minutes. Add 1/3 cup of water and cover to steam until cooked all the way through, another 3-4 minutes.
  6. Eat immediately with black vinegar and spicy mustard.
