Herbal Pork Jiǎozi

Yield: 25 dumplings
Ingredients

- 1/4cabbage(finely shredded)
- 1 largecarrot(shredded)
- 1 bunchscallions(chopped)
- 1 bunchcilantro(chopped)
- 2garlic(minced)
- 1 knobginger(minced)

- 8 ozground pork

- 25 rounddumpling wrappers

- 1/2 tspkosher salt(plus more to taste)
- 1 tspsesame oil
Instructions
- Add cabbage and pinch salt to large bowl and massage. Set aside for 30 minutes.
- Wring cabbage of extra water. Add pork, carrot, herbs and aromatics. Combine and add kosher salt and sesame oil.
- Test the seasoning by pinching off a tablespoon of the mixture and pan frying 3-4 minutes until golden and crisp and then tasting. Now is when you adjust the seasoning of the mixture if you want more salt or aromatics.
- Spoon a small amount of the mixture into the center of dumpling wrapper (about 2 tsp worth). Dab the edges of the wrapper with water and pinch the edges shut to seal.
- Pan fry 8 to 10 at a time over medium heat in vegetable oil until deeply golden, about 3-4 minutes. Add 1/3 cup of water and cover to steam until cooked all the way through, another 3-4 minutes.
- Eat immediately with black vinegar and spicy mustard.
