Pumpkin Bread

Ingredients

- 2 cupscanned pumpkin((1)(15 oz can))

- 1 1/2 tspsalt
- 1-2 tspcinnamon
- 1/2 tspnutmeg
- 3 cupssugar
- 1 cupvegetable oil
- 1 tspvanilla
- 2 tspbaking soda

- 2/3 cupwater(only)
Instructions
- Mix pumpkin, water, oil, and eggs together.
- Pour into dry mix and mix just till moist.
- Pour into two greased medium loaf pans.
- Bake at 350°F (pre-heated) for 1 hr to 1 hr & 15 min or until toothpick in center comes out dry.
- Cool before removing from pans.
- When cooled, dust with confectioners sugar.
My notes
Original value for vegetable oil was crossed out and updated to 1 cup. Notes on eggs: "2015 - 5 eggs" and "2020 - 4 eggs", so using 4 eggs per the latest year. The water amount was noted as "only 2/3 cup".
Additional note: "Can add nuts & cranberries to mix or glaze when cool."
