Pumpkin Bread

Ingredients

  • 2 cupscanned pumpkin((1)(15 oz can))

  • 3 1/2 cupsall-purpose flour

  • 1 1/2 tspsalt
  • 1-2 tspcinnamon
  • 1/2 tspnutmeg
  • 3 cupssugar
  • 1 cupvegetable oil
  • 1 tspvanilla
  • 2 tspbaking soda
other
  • 2/3 cupwater(only)

Instructions

  1. Mix pumpkin, water, oil, and eggs together.
  2. Pour into dry mix and mix just till moist.
  3. Pour into two greased medium loaf pans.
  4. Bake at 350°F (pre-heated) for 1 hr to 1 hr & 15 min or until toothpick in center comes out dry.
  5. Cool before removing from pans.
  6. When cooled, dust with confectioners sugar.

My notes

Original value for vegetable oil was crossed out and updated to 1 cup. Notes on eggs: "2015 - 5 eggs" and "2020 - 4 eggs", so using 4 eggs per the latest year. The water amount was noted as "only 2/3 cup". Additional note: "Can add nuts & cranberries to mix or glaze when cool."
