Cucumber Salad

Cucumber Salad

Ingredients

produce
  • 1cucumber(large, halved lengthwise and thinly sliced, about 3 cups)
  • 1onion(small, thinly sliced and separated into rings)
dairy
  • 1/2 cupsour cream
pantry staple
  • 1 tbspvinegar
  • 1 tspsugar
  • 1/4 tspdillweed(dried)

Instructions

  1. Stir together sour cream, vinegar, sugar, dillweed (if desired), 1 teaspoon salt, and dash pepper.
  2. Add cucumber and onion slices; toss to coat.
  3. Cover; chill for 2 to 48 hours, stirring often.
  4. Stir before serving.

My notes

ADDITIONAL RECIPE - Marinated Cucumbers: Prepare as above, except omit sour cream and dillweed. Increase vinegar or lemon juice to 1/4 cup and sugar to 2 tablespoons. If desired, stir 1/2 teaspoon celery seed into vinegar mixture. Cover and chill for 2 hours or up to 5 days, stirring occasionally.
