- ✓pepper
- ✓balsamic vinegar
- ○1/2 cupbread crumbs
- ✓olive oil
Instructions
- Cut the tomato into thick slices, about three quarters of an inch.
- Season the slices with salt and pepper and drizzle with balsamic vinegar.
- Sprinkle the cut sides of the slices with bread crumbs.
- Heat olive oil in a large sauté pan over medium-high heat until hot.
- Add the tomato slices, bread-crumb-side down, and cook until golden brown, about two minutes.
- Turn the slices over and briefly sear the other side, about 15 seconds.
- Transfer the slices onto a paper-towel-lined tray.
- Sprinkle Parmesan over the bread-crumb-crusted sides while still hot.
- Tear basil leaves and place over half of the glazed tomato slices.
- Cover with the remaining slices to form a sandwich.
