Blue Hill's Tomato Sliders

Ingredients

  • basil leaves(torn)
  • 1tomato

  • parmesan(grated)
pantry staple
  • salt
  • pepper
  • balsamic vinegar
  • 1/2 cupbread crumbs
  • olive oil

Instructions

  1. Cut the tomato into thick slices, about three quarters of an inch.
  2. Season the slices with salt and pepper and drizzle with balsamic vinegar.
  3. Sprinkle the cut sides of the slices with bread crumbs.
  4. Heat olive oil in a large sauté pan over medium-high heat until hot.
  5. Add the tomato slices, bread-crumb-side down, and cook until golden brown, about two minutes.
  6. Turn the slices over and briefly sear the other side, about 15 seconds.
  7. Transfer the slices onto a paper-towel-lined tray.
  8. Sprinkle Parmesan over the bread-crumb-crusted sides while still hot.
  9. Tear basil leaves and place over half of the glazed tomato slices.
  10. Cover with the remaining slices to form a sandwich.
