Moist Banana Bread

  • 1 cupmashed ripe bananas(mashed, about 3)

  • 1/4 cupbutter(melted and cooled)

  • 1 3/4 cupsall-purpose flour

  • ·1 teaspoonsalt
  • 1 teaspoonbaking soda
  • 1 cupsugar

Instructions

  1. In a bowl, stir together flour, salt, and soda; set aside.
  2. In another bowl, combine bananas and sugar, stir well. Then add egg and butter and stir to blend.
  3. Pour liquid ingredients into dry ingredients and mix just until moistened.
  4. Pour batter into a greased 8 1/2 by 4 1/2-inch loaf pan.
  5. Bake in a 325 degree F oven for 55 to 60 minutes or until bread begins to pull away from sides of pan and a wooden skewer inserted in center comes out clean.
  6. Let cool in pan for 10 minutes, then turn out onto a rack to cool completely before slicing.
