Garlic Egg Fried Rice

- ○protein of choice(cooked)

- ○6 cupsrice(cooked 1 day old)

- ·3/4 cupoil
- ✓corn starch
- ·8 tbspoil
- ○Maggi seasoning
- ✓1 tbspsugar
- ·1 tbspsalt
- ·1/2 tbsppepper
- ○1 tbspchicken bouillon
Instructions
- Mince garlic then coat garlic in just enough corn starch so it's coated.
- Heat up 3/4 cup oil and then fry garlic until golden brown. Pour garlic through a fine strainer so the oil and garlic are separated. Reserve garlic infused oil.
- Chop scallion, separating the whites from the greens.
- In a skillet, heat up 8 TBSP of oil. Use as much of your garlic infused oil as you can and then substitute the remaining with regular oil.
- Once oil is hot, add the white part of your scallion and cook for 15-20 seconds. Then add your eggs and scramble.
- Once eggs are 75% of the way cooked, push eggs off to the side and add 1 day old rice, breaking up any large clumps.
- Once rice is broken up, combine eggs into it. Cook this for 5 minutes. Then add seasonings and combine well.
- Add the green parts of your scallion, protein of choice, turn off heat and top with fried garlic.
