French Mother-in-Law’s Vinaigrette

Ingredients

  • Fines herbes(minced (optional))
  • 1/2shallot(minced)
pantry staple
  • Piment d’Espelette(optional)
  • 1 Tred wine vinegar
  • 1/2 tsalt
  • 1 TDijon mustard
  • 2-3 Textra virgin olive oil
  • 1 Tavocado oil
  • Black pepper

Instructions

  1. Mix shallot, vinegar, and salt in your salad bowl.
  2. Let sit 10 minutes or so for salt to dissolve.
  3. Add mustard and stir.
  4. Stir in oils, then season with pepper and Piment d’Espelette, if using.
  5. Taste for seasoning, adding more salt, or oil if too sharp, vinegar if lacking tang.
  6. Add minced herbs and stir.
