Marinated Olives with Citrus, Almonds & Golden Raisins

Ingredients

- 1/2lemon rind(rind)

- 3 tbsphoney
- 1 cupolive oil
- 1 tbspmustard seeds
- 1/2 tbspturmeric
- 1 tbspcrushed red pepper
- 1/2 tbspblack pepper(freshly cracked)
- 1/2 tbspdried thyme(dried)
- 3 tbspwhite wine vinegar
- 3 cupsmixed olives(Castelvetrano, Lebanese green olives, your favorite mix, or canned)
- 1/4 cupraw almonds(raw)
- 1/4 cupgolden raisins(golden)
Instructions
- Add the olives directly into a large bowl or jar.
- In a small saucepan, heat the olive oil over low to medium heat. Keep it warm but do not let it burn.
- Add the mustard seeds, turmeric, crushed red pepper, black pepper, thyme, citrus rind, almonds, and raisins. Let everything gently warm together for a few minutes until fragrant.
- Stir in the white wine vinegar and honey until fully combined.
- Pour the warm marinade over the olives and toss well so everything is evenly coated.
- Let sit to marinate for at least a few hours, preferably overnight for the best flavor.
