Marinated Olives with Citrus, Almonds & Golden Raisins

Ingredients

  • 1/2orange rind(rind)
  • 1/2lemon rind(rind)

  • 3 tbsphoney
  • 1 cupolive oil
  • 1 tbspmustard seeds
  • 1/2 tbspturmeric
  • 1 tbspcrushed red pepper
  • 1/2 tbspblack pepper(freshly cracked)
  • 1/2 tbspdried thyme(dried)
  • 3 tbspwhite wine vinegar
  • 3 cupsmixed olives(Castelvetrano, Lebanese green olives, your favorite mix, or canned)
  • 1/4 cupraw almonds(raw)
  • 1/4 cupgolden raisins(golden)

Instructions

  1. Add the olives directly into a large bowl or jar.
  2. In a small saucepan, heat the olive oil over low to medium heat. Keep it warm but do not let it burn.
  3. Add the mustard seeds, turmeric, crushed red pepper, black pepper, thyme, citrus rind, almonds, and raisins. Let everything gently warm together for a few minutes until fragrant.
  4. Stir in the white wine vinegar and honey until fully combined.
  5. Pour the warm marinade over the olives and toss well so everything is evenly coated.
  6. Let sit to marinate for at least a few hours, preferably overnight for the best flavor.
