Cheddar and Chive Scones

Instructions

  1. Preheat oven to 400°F or 200°C. Line a baking sheet with parchment.
  2. In a large bowl, mix flour, sugar, baking powder, and salt. Add cold butter and crumble with your hands until it resembles coarse sand. Chill briefly if the butter softens.
  3. Make a well in the center, add cream and egg, whisk to combine, then mix into dry ingredients until a shaggy dough forms.
  4. Add cheddar, chives, and sumac. Mix just until the dough comes together. If too dry, add a bit more cream.
  5. Transfer to a floured surface. Pat into a 6x6” square, then divide into 4 equal pieces.
  6. Place on baking sheet with space between. Brush tops with cream.
  7. Bake 25–30 minutes, until golden and a knife inserted comes out clean.
  8. Serve hot, slice open, add butter, drizzle with hot honey, and devour.
