Carrot Cake Baked Oats

Ingredients

  • bananas(mashed)
  • carrots(grated)
protein
  • 1/4 cupwalnuts(crushed)
  • 2 tbspeanut butter
  • 30 gprotein powder or flour
dairy
  • 1 1/2 cupsmilk
  • vanilla protein yoghurt
grain
  • 2 cupsoats
pantry staple
  • honey or maple syrup
  • 1 tspbaking powder
  • 1/2 tspcinnamon

Instructions

  1. Mash the ripe bananas.
  2. Grate the carrots.
  3. In a large mixing bowl, combine the oats, mashed bananas, grated carrots, protein powder or flour, baking powder, cinnamon, honey or maple syrup, and milk.
  4. Stir until all ingredients are well combined.
  5. Fold in the crushed walnuts and peanut butter.
  6. Pour the mixture into a baking dish and bake until set.
  7. Top with vanilla protein yoghurt and extra walnuts before serving.
