Crockpot Cilantro Lime Chicken

Ingredients

  • 1/2 - 1 cupcilantro(fresh, roughly chopped)
  • lime zest
  • 3/4 cuplime juice(fresh)
  • 2-3garlic cloves(smashed)

  • 3chicken breasts(boneless, skinless)

  • 1 teaspoonkosher salt
  • 1/2 cupextra virgin olive oil
other
  • 1/4 cupchicken broth(ONLY use if cooking on LOW)

Instructions

  1. In a small bowl, add ¾ cup fresh lime juice, ½ cup extra virgin olive oil, zest of 1 lime, and 1 teaspoon kosher salt; stir to combine. Add ¼ cup chicken broth to the mixture ONLY if cooking on LOW; if you are cooking on HIGH you do not need it.
  2. Place 3 boneless, skinless chicken breasts in the bottom of the slow cooker. Pour lime juice mixture over chicken and add 2-3 garlic cloves. Cover and cook on HIGH 3 ½ - 4 hours or on LOW for 6-8 hours.
  3. Remove chicken from slow cooker, shred with two forks and return to slow cooker. Add ½ - 1 cup fresh cilantro or as much as you desire and stir to combine.
  4. Enjoy right away!
