Green Strata With Goat Cheese and Herbs

Ingredients

  • 1 tspthyme(chopped)
  • 1 tsprosemary(chopped)
  • 8 ozmixed greens(washed and roughly chopped)
  • 1onion(thinly sliced)

  • 6 ozgoat cheese(crumbled)

  • 6 cupbread(cubed, day-old)

  • 1/2 tspnutmeg
  • 1 tbspolive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook until soft, about 5 minutes. Season with salt and pepper.
  3. Add the greens and cook until wilted, about 3 minutes. Remove from heat and set aside.
  4. In a large bowl, whisk together the eggs, milk, thyme, rosemary, nutmeg, and a pinch of salt and pepper.
  5. Add the cooked greens and onions, goat cheese, and bread cubes to the egg mixture. Stir to combine.
  6. Pour the mixture into a greased 9x13-inch baking dish.
  7. Cover and refrigerate for at least 2 hours or overnight.
  8. Preheat the oven to 350°F (175°C).
  9. Bake the strata, uncovered, until puffed and golden, about 45 to 50 minutes.
  10. Let cool slightly before serving.

This dish can be prepared a day in advance and baked just before serving.
