Green Strata With Goat Cheese and Herbs

Ingredients

- 1 tspthyme(chopped)
- 1 tsprosemary(chopped)
- 8 ozmixed greens(washed and roughly chopped)
- 1onion(thinly sliced)

- 6 ozgoat cheese(crumbled)

- 6 cupbread(cubed, day-old)

- 1/2 tspnutmeg
- 1 tbspolive oil
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook until soft, about 5 minutes. Season with salt and pepper.
- Add the greens and cook until wilted, about 3 minutes. Remove from heat and set aside.
- In a large bowl, whisk together the eggs, milk, thyme, rosemary, nutmeg, and a pinch of salt and pepper.
- Add the cooked greens and onions, goat cheese, and bread cubes to the egg mixture. Stir to combine.
- Pour the mixture into a greased 9x13-inch baking dish.
- Cover and refrigerate for at least 2 hours or overnight.
- Preheat the oven to 350°F (175°C).
- Bake the strata, uncovered, until puffed and golden, about 45 to 50 minutes.
- Let cool slightly before serving.
