Marinated Feta

Ingredients

- 1shallot(thinly sliced)
- 4lemon peels
- 4 clovesgarlic(thinly sliced)

- 200 to 400feta cheese(cubed)

- 1 teaspoonblack peppercorns
- 1 teaspooncoriander seeds
- 1/2 teaspooncumin seeds
- 1 teaspoonAleppo pepper flakes
- 1/3 to 1/2 cupextra-virgin olive oil
- 1 tablespoondried oregano
Instructions
- Place the cubed feta in a jar, bowl, or container of choice.
- Add the peppercorns, coriander seeds, and cumin seeds to a dry pan on medium heat. Toast the spices for 2 to 3 minutes until fragrant.
- Remove the pan off heat. Add the remaining ingredients to the pan. Return the pan to the stove and warm up the oil, on low heat for 2 to 3 minutes. We’re not looking to sizzle the spices, just to get the oil lukewarm.
- Pour everything over the feta. Store in the fridge up to a few weeks. Use the leftover oil for salads, searing, and all the fun stuff.
