Marinated Feta

Ingredients

  • 1shallot(thinly sliced)
  • 4lemon peels
  • 4 clovesgarlic(thinly sliced)

  • 200 to 400feta cheese(cubed)
pantry staple
  • 1 teaspoonblack peppercorns
  • 1 teaspooncoriander seeds
  • 1/2 teaspooncumin seeds
  • 1 teaspoonAleppo pepper flakes
  • 1/3 to 1/2 cupextra-virgin olive oil
  • 1 tablespoondried oregano

Instructions

  1. Place the cubed feta in a jar, bowl, or container of choice.
  2. Add the peppercorns, coriander seeds, and cumin seeds to a dry pan on medium heat. Toast the spices for 2 to 3 minutes until fragrant.
  3. Remove the pan off heat. Add the remaining ingredients to the pan. Return the pan to the stove and warm up the oil, on low heat for 2 to 3 minutes. We’re not looking to sizzle the spices, just to get the oil lukewarm.
  4. Pour everything over the feta. Store in the fridge up to a few weeks. Use the leftover oil for salads, searing, and all the fun stuff.
