Upside down Parmesan Asparagus Puff Tart

  • 20 gpine nuts

Instructions

  1. Preheat oven to 175c/350f fan. Line a baking sheet with parchment paper. Sprinkle 1 tsp grated Parmesan lengthways and top with pine nuts.
  2. Rub the asparagus with oil and season with salt and pepper. Place the asparagus on top of the cheese and cover with a long piece of puff pastry. Cut the shape and trim the asparagus to length.
  3. Brush egg yolk on top and sprinkle with some more Parmesan cheese.
  4. Bake for about 20 minutes until puffed up and golden brown. Serve hot.
