Lovely Fudge Pie

- ○3large eggs(separated)

- ○1/2 cupunsalted butter(softened)
- ✓1 cupheavy cream(whipped until soft peaks form)

- ○1/4 cupall-purpose flour

- ○2 ouncesunsweetened chocolate(melted and cooled)
- ○1 tablespoonvanilla extract
- ○1/4 cupstrawberry preserves
- ○1/2 cupsugar
Instructions
- Preheat the oven to 325°F. Butter and flour an 8-inch pie plate.
- In a mixing bowl, cream the butter with the sugar by hand or machine. Lightly beat the egg yolks and add to the butter-sugar mixture. Add the flour, chocolate, and vanilla and mix well.
- In another bowl, beat the egg whites until stiff but not dry. Fold into the batter.
- Spread about one-fourth of the batter evenly over the bottom of the pie pan. Spread the preserves on top, spreading not quite to the edges. Cover with the remaining batter.
- Bake until the surface of the pie feels firm but the texture feels soft, about 30 minutes. Do not overbake. Set the pie on a rack to cool to room temperature. Serve with whipped cream.
