Lovely Fudge Pie

Ingredients

  • 3large eggs(separated)

  • 1/2 cupunsalted butter(softened)
  • 1 cupheavy cream(whipped until soft peaks form)
grain
  • 1/4 cupall-purpose flour
pantry staple
  • 2 ouncesunsweetened chocolate(melted and cooled)
  • 1 tablespoonvanilla extract
  • 1/4 cupstrawberry preserves
  • 1/2 cupsugar

Instructions

  1. Preheat the oven to 325°F. Butter and flour an 8-inch pie plate.
  2. In a mixing bowl, cream the butter with the sugar by hand or machine. Lightly beat the egg yolks and add to the butter-sugar mixture. Add the flour, chocolate, and vanilla and mix well.
  3. In another bowl, beat the egg whites until stiff but not dry. Fold into the batter.
  4. Spread about one-fourth of the batter evenly over the bottom of the pie pan. Spread the preserves on top, spreading not quite to the edges. Cover with the remaining batter.
  5. Bake until the surface of the pie feels firm but the texture feels soft, about 30 minutes. Do not overbake. Set the pie on a rack to cool to room temperature. Serve with whipped cream.
