Coconut Curry Lentil Soup

  • garlic(fresh)
  • onions
  • ginger(fresh)
protein
  • brown lentils
other
  • cinnamon sticks
  • stock
  • yellow curry powder
  • coconut milk

Instructions

  1. Start by heating a soup pot over medium heat.
  2. Add onions, garlic, and ginger, and sauté until fragrant.
  3. Stir in yellow curry powder and cinnamon sticks.
  4. Add brown lentils, coconut milk, and vegetable or chicken stock.
  5. Bring the mixture to a boil, then reduce heat and simmer until lentils are tender.
  6. Adjust seasoning to taste and serve hot.

My notes

Serve with a big hunk of buttered crusty bread.
