Coconut Curry Lentil Soup

- ○yellow curry powder
- ✓coconut milk
Instructions
- Start by heating a soup pot over medium heat.
- Add onions, garlic, and ginger, and sauté until fragrant.
- Stir in yellow curry powder and cinnamon sticks.
- Add brown lentils, coconut milk, and vegetable or chicken stock.
- Bring the mixture to a boil, then reduce heat and simmer until lentils are tender.
- Adjust seasoning to taste and serve hot.

Serve with a big hunk of buttered crusty bread.
