Cauliflower Cheese

Ingredients

  • chives(chopped)
  • 1 medium headcauliflower

  • 4 tbspunsalted butter
  • 1 1/4 cupscheddar cheese(grated)
  • 2 cupsmilk
pantry staple
  • black pepper
  • 2 tspmustard powder
  • 4 tbspall-purpose flour
  • salt(to taste)

Instructions

  1. Heat oven to 400 degrees.
  2. Trim cauliflower and remove tough core. Cut into 1 to 2-inch florets.
  3. Bring a large pot of salted water to boil and add cauliflower florets. Cook for 5 to 7 minutes, until tender but not mushy. Drain and set aside.
  4. In a medium saucepan, melt butter over medium heat. Add flour and mustard powder, and whisk until smooth.
  5. Slowly whisk in milk, a little at a time, until mixture is smooth. Bring to a simmer and cook for 2 to 3 minutes, until thickened.
  6. Remove from heat and stir in 1 1/4 cups of cheddar cheese until melted. Season with salt and pepper or cayenne to taste.
  7. Arrange cauliflower in a baking dish and pour cheese sauce over it.
  8. Sprinkle with remaining 2 tablespoons of cheddar cheese.
  9. Bake for 25 minutes, until bubbly and lightly browned.
  10. Garnish with chopped chives or parsley, if desired, and serve.

My notes

You could infuse the milk with a bay leaf or minced clove of garlic. Stir chopped parsley into the sauce for color. Use Dijon or English mustard if dry mustard is unavailable. Add breadcrumbs on top for extra crunch. For a meal-in-one, add grilled pork sausages.
