Glazed Leeks With Pine Nut Salsa Verde

Instructions
- Bring fresno chile, honey, and sherry or red wine vinegar to a boil.
- Reduce the mixture halfway for about five minutes to create a glaze.
- Cook leeks until tender.
- Pour the chile-honey-vinegar glaze over the leeks.
- Prepare the salsa verde by mixing finely chopped parsley, pine nuts, capers, olive oil, and a pinch of salt.
- Drizzle the salsa verde over the glazed leeks.

The glaze is slightly spicy-sweet and ultra vinegary, while the salsa verde adds a nutty, salty, herby bite.
