Glazed Leeks With Pine Nut Salsa Verde

  • parsley(Finely chopped)
  • 1fresno chile

  • vinegar
  • honey

  • pine nuts
  • capers

Instructions

  1. Bring fresno chile, honey, and sherry or red wine vinegar to a boil.
  2. Reduce the mixture halfway for about five minutes to create a glaze.
  3. Cook leeks until tender.
  4. Pour the chile-honey-vinegar glaze over the leeks.
  5. Prepare the salsa verde by mixing finely chopped parsley, pine nuts, capers, olive oil, and a pinch of salt.
  6. Drizzle the salsa verde over the glazed leeks.

My notes

The glaze is slightly spicy-sweet and ultra vinegary, while the salsa verde adds a nutty, salty, herby bite.
