Sesame & Miso Roasties

  • 0.5lime juice(juice of)
  • 1 clovegarlic(minced)
  • 4Maris Piper potatoes(peeled and cut into 1.5 inch cubes)

  • 1 tbspvegan parmesan(to serve)

  • 1 tbspcornflour
  • 2 tbspmixed sesame seeds
  • ·1 tsppepper
  • ·4 tbspoil
  • 1 tbspsesame oil
  • 1 tspDijon mustard
  • 1 tbspnutritional yeast
  • 1 tspagave
  • 1 tbspmiso paste

Instructions

  1. Preheat your oven to 200c.
  2. Place the potatoes into a saucepan of cold salted water and bring to the boil. Boil for 8-10 minutes before draining and leaving to cool.
  3. Place oil into a deep baking tray and place into the oven to get hot.
  4. Add the cornflour, sesame seeds and seasoning to a bowl and mix. Add the cooled potatoes and press the mixture onto each one to ensure they are coated.
  5. Remove the oil from the oven and carefully place the potatoes into the tray.
  6. Place into the oven for 35-40 minutes. At the 25 minute mark, drain most of the oil out of the tray and flip the potatoes over.
  7. For the dressing, simply mix all the ingredients together.
  8. Toss the cooked potatoes into the dressing, top with vegan parm and serve immediately.
