Ingredients

- 1/2 ouncelemon juice

- 1 1/2 ouncestequila(preferably Tapatio Blanco)
- 1 ounceyuzu syrup
- 1 ounceseaweed water
- 3 dashesorange bitters
- soda water(to top)
Instructions
- Combine all ingredients, except the soda water, in a highball glass over ice.
- Top with soda water.
My notes
Yuzu Syrup: Blend 3 ounces pure glucose powder, 3 ounces agave syrup, 3 ounces yuzu juice, and 3 ounces water with a hand blender until dissolved. Seaweed Water: Add 1/2 ounce dried seaweed to 1 3/4 cups water at room temperature and allow it to rehydrate until it's tripled in size. Strain, reserving the water.
