Spicy Wedge

Ingredients

- 1lemon(juice + zest)
- 1/2red onion(thinly sliced and rinsed)
- 1/2 clovegarlic(grated on microplane)
- 1 headiceberg lettuce
- dill(roughly chopped)
- chives(thinly sliced)

- 1 linkspanish chorizo(diced, and fried till crispy)

- blue cheese
- 150 glabneh
pantry staple
- pepper(to taste)
- water(to let it out)
- salt(to taste)

- chilli oil(to taste)
Instructions
- Prepare the lettuce: Cut the iceberg lettuce into wedges.
- Prepare the onions: Thinly slice the red onion and rinse it.
- Cook the chorizo: Dice the chorizo and fry it until crispy.
- In a bowl, mix together the blue cheese, labneh, and grated garlic.
- Add the juice and zest of one lemon to the mixture.
- Stir in the chopped dill, sliced chives, chili oil, and a splash of water to loosen the dressing.
- Season with salt and pepper to taste.
- Drizzle the dressing over the lettuce wedges and top with fried chorizo and sliced onions.
