Spicy Wedge

Ingredients

produce
  • 1lemon(juice + zest)
  • 1/2red onion(thinly sliced and rinsed)
  • 1/2 clovegarlic(grated on microplane)
  • 1 headiceberg lettuce
  • dill(roughly chopped)
  • chives(thinly sliced)
protein
  • 1 linkspanish chorizo(diced, and fried till crispy)
dairy
  • blue cheese
  • 150 glabneh
pantry staple
  • pepper(to taste)
  • water(to let it out)
  • salt(to taste)
other
  • chilli oil(to taste)

Instructions

  1. Prepare the lettuce: Cut the iceberg lettuce into wedges.
  2. Prepare the onions: Thinly slice the red onion and rinse it.
  3. Cook the chorizo: Dice the chorizo and fry it until crispy.
  4. In a bowl, mix together the blue cheese, labneh, and grated garlic.
  5. Add the juice and zest of one lemon to the mixture.
  6. Stir in the chopped dill, sliced chives, chili oil, and a splash of water to loosen the dressing.
  7. Season with salt and pepper to taste.
  8. Drizzle the dressing over the lettuce wedges and top with fried chorizo and sliced onions.
