My Favorite Brownies

  • 1 teaspoonvanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper or foil, leaving an overhang on two sides.
  2. In a medium heatproof bowl over gently simmering water, melt the unsweetened chocolate and butter together, stirring until smooth.
  3. Remove the bowl from the heat and whisk in the sugar, followed by the eggs, one at a time, then the vanilla and salt.
  4. Stir in the flour until just incorporated.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  7. Let the brownies cool completely in the pan on a rack.
  8. Use the parchment or foil overhang to lift the brownies out of the pan before cutting into squares.

My notes

These brownies are bittersweet and chewy, and can be adapted with various additions like cream cheese or white chocolate mint ganache, but they are perfect on their own.
