Filo Börek Muffins

Ingredients

  • 25 gflat leaf parsley leaves(finely chopped)
  • 10 gmint leaves(finely chopped)
  • 75 gspinach
  • 1 tspdried mint

  • 100 gnatural yogurt
  • 50 gbutter(melted)
  • 50 ghalloumi

  • 12filo sheets(roughly chopped into 3-4cm pieces)
pantry staple
  • 1 tspbaking powder
  • coarse black pepper
  • sea salt flakes
  • 1/2 tsppul biber
other
  • 100 mlsparkling water

Instructions

  1. Preheat oven to 180°C fan / 200°C.
  2. Whisk together the eggs, yoghurt, baking powder, and sparkling water.
  3. Mix through the cut filo, ensuring that the filo pieces are as separated as possible when you add them to the bowl.
  4. Crumble in the cheese, add the halloumi, herbs and spices, and mix well.
  5. Melt the butter and brush each round of a deep muffin tray with a little butter.
  6. Fill each round with equal measures of the börek mixture.
  7. Drizzle over the remaining butter and bake in the oven for around 25-30 mins or until each börek muffin is beautifully browned and bubbling.
