Sausage Muffin Teasers

Yield: Makes about 4 dozen muffins

Ingredients

- 2 tablespoonsonion(finely chopped)
- 1/2 teaspoonthyme

- 1/2 lbbulk pork sausage

- 1/4 cupextra sharp Cheddar cheese(shredded)
- 1 cupmilk

- 2 cupsall-purpose flour

- 1 tablespoonbaking powder
- 1 tablespoonsugar
- 1/4 teaspoonsalt
- Dashcayenne pepper
- 1/4 cupvegetable oil
Instructions
- In 1-quart casserole, place sausage; cover. Microwave at HIGH (10) 3 to 5 minutes until browned, stirring to crumble after 2 minutes. Drain well; set aside.
- In medium bowl, combine flour, baking powder, sugar, salt, thyme and cayenne pepper; make a well in center of mixture. Combine milk, egg and oil. Add to dry ingredients, stirring just until moistened. Stir in sausage, cheese and onion.
- Place metal accessory rack on rack supports. Preheat oven to 425°F.
- Spoon batter into greased 1 3/4x1-inch muffin pans, filling three-fourths full.
- Bake 13 to 18 minutes. Remove from pans immediately.
