Ingredients

- 1 wholeonion(chopped)
- 1 bunchkale(roughly chopped)
- 8 clovesgarlic(sliced)
- 2 wholepotatoes(chopped)

Instructions
- Start by chopping your chorizo into small discs, and fry them in a hot pan. Allow the oil from the chorizo to render, and wait til the pieces are crisp before removing from the container. Set aside for later.
- Into the pot with chorizo oil goes the chopped onions, potatoes, and garlic, and saute until softened.
- Pour chicken stock and allow the soup to simmer to soften the potatoes, before going blending to create a rich broth. It should have a thick consistency.
- Add back in your chorizo along with some chopped Kale. Serve hot and enjoy!
