Cilantro Lime Chicken Sandwich

  • 1/2 cuplime juice

  • 1/4 cupcabbage

  • onion powder(to taste)
  • 1 tbsphoney
  • 1 tspcumin
  • salt(to taste)
  • pepper(to taste)
  • garlic powder(to taste)
  • 1/2 cupwater
  • 1 tbspavocado oil
  • tbsphoney pickle juice

Instructions

  1. Dredge the chicken in flour, egg, then corn flakes.
  2. Air fry the chicken at 285F for 18 to 20 minutes, flipping halfway through or till an internal temperature of 165F is reached.
  3. In a pan, add avocado oil, lime juice, honey, cumin, salt, pepper, garlic, and water.
  4. Reduce over medium heat to make cilantro lime sauce.
  5. Slice cucumber, cabbage, and jalapeño for the salad.
  6. Mix cucumber, cabbage, jalapeño, honey pickle juice, salt, pepper, onion powder, garlic powder, and lime zest.
  7. Shake and enjoy the cucumber salad.
  8. Assemble the sandwich with fried chicken, cilantro lime sauce, on ciabatta bread with cucumber salad.
