Cilantro Lime Chicken Sandwich

- 1/2 cupwater
- 1 tbspavocado oil
- tbsphoney pickle juice
Instructions
- Dredge the chicken in flour, egg, then corn flakes.
- Air fry the chicken at 285F for 18 to 20 minutes, flipping halfway through or till an internal temperature of 165F is reached.
- In a pan, add avocado oil, lime juice, honey, cumin, salt, pepper, garlic, and water.
- Reduce over medium heat to make cilantro lime sauce.
- Slice cucumber, cabbage, and jalapeño for the salad.
- Mix cucumber, cabbage, jalapeño, honey pickle juice, salt, pepper, onion powder, garlic powder, and lime zest.
- Shake and enjoy the cucumber salad.
- Assemble the sandwich with fried chicken, cilantro lime sauce, on ciabatta bread with cucumber salad.
