Sticky Toffee Pudding

Ingredients

  • 1 tspvanilla extract
  • 75 glight brown sugar

  • 110 mlboiling water
  • 1/2 tspbicarbonate of soda

Instructions

  1. Soak dates in a bowl with boiling water and bicarbonate of soda for 10 minutes. Mash or blend into paste.
  2. Cream butter and sugar till light and fluffy.
  3. Add eggs and vanilla, one egg at a time.
  4. Fold in flour, cinnamon, nutmeg, and salt.
  5. Pour into greased baking dish and bake at 180 degrees Celsius (160 fan) for 25-30 minutes, till skewer comes out clean.
  6. In separate small pan, melt butter, sugar, and syrup till dissolved. Then add cream and vanilla extract.
  7. Pour onto pudding.
