Instructions
- Preheat the oven to 400 degrees, lightly spray or grease the muffin cups (12).
- Combine the flour, sugar, baking powder, and soda in a large bowl and whisk till light and blended.
- Whisk together the buttermilk, melted butter, eggs, and vanilla in another bowl till smooth.
- Add the liquid ingredients to the dry ingredients and stir till just moistened, do not overmix or muffins will be tough.
- Divide the batter evenly into the muffin tins filling 1/2 to 2/3 full.
- Bake until the tops are golden and a toothpick inserted in the center of the muffin comes out clean, not wet.
- Cool on a wire rack before removing the muffins from the pan.
- Dip the top of muffin in melted butter and dip into cinnamon sugar mixture till coated.
- Serve the same day or freeze wrapped well.
