Coffee Cake Muffins

Ingredients

  • 1/2 to 1 stickbutter(melted)
  • 1 stickbutter(melted and cooled)

  • 2 teaspoonsbaking powder
  • 1/2 cupsugar
  • 1/2 cupsugar

Instructions

  1. Preheat the oven to 400 degrees, lightly spray or grease the muffin cups (12).
  2. Combine the flour, sugar, baking powder, and soda in a large bowl and whisk till light and blended.
  3. Whisk together the buttermilk, melted butter, eggs, and vanilla in another bowl till smooth.
  4. Add the liquid ingredients to the dry ingredients and stir till just moistened, do not overmix or muffins will be tough.
  5. Divide the batter evenly into the muffin tins filling 1/2 to 2/3 full.
  6. Bake until the tops are golden and a toothpick inserted in the center of the muffin comes out clean, not wet.
  7. Cool on a wire rack before removing the muffins from the pan.
  8. Dip the top of muffin in melted butter and dip into cinnamon sugar mixture till coated.
  9. Serve the same day or freeze wrapped well.
