Cold Japanese Noodle Salad (Hiyashi Chuka) with Sesame Dressing

Ingredients

  • 1/4 cuptoasted sesame seeds
  • 3 Tbspchicken stock
  • 3 tspsoy sauce
  • 1 Tbspsesame oil
  • 1 tspdijon mustard
  • 1 tspsugar
  • 1 tsprice vinegar

Instructions

  1. Grind the sesame seeds in a suribachi, mortar and pestle, or food processor. You can also use tahini if you don’t own these tools.
  2. Add the rest of the ingredients to the ground sesame seeds.
  3. Mix well and adjust the seasoning to taste. The dressing should be bright, a touch spicy, and a little salty.
  4. The dressing should be on the aggressive side because it will be used to season neutral ingredients like noodles and cucumbers.
