Cold Japanese Noodle Salad (Hiyashi Chuka) with Sesame Dressing

- 1/4 cuptoasted sesame seeds
- 3 Tbspchicken stock
- 3 tspsoy sauce
- 1 Tbspsesame oil
- 1 tspdijon mustard
- 1 tspsugar
- 1 tsprice vinegar
Instructions
- Grind the sesame seeds in a suribachi, mortar and pestle, or food processor. You can also use tahini if you don’t own these tools.
- Add the rest of the ingredients to the ground sesame seeds.
- Mix well and adjust the seasoning to taste. The dressing should be bright, a touch spicy, and a little salty.
- The dressing should be on the aggressive side because it will be used to season neutral ingredients like noodles and cucumbers.
