Chocolate-Sour Cream Layer Cake

Ingredients

- 1/2 cupsour cream(room temperature)
- 10 tablespoonsunsalted butter(room temperature)
- 1 cupsour cream

- 1 cupsugar
- 1 teaspoonvanilla extract
- 2 teaspoonsinstant coffee powder
- 10 ouncessemisweet chocolate(chopped)
- 6 tablespoonsunsweetened cocoa powder
- 1/2 teaspoonsalt
- 1/4 teaspoonbaking powder
- 1/4 teaspoonbaking soda

- 1 1/2 teaspoonshot water
Instructions
- Position rack in lowest third of oven and preheat to 350°F. Grease two 8-inch-diameter cake pans with 2-inch-high sides. Line bottoms with parchment; grease parchment.
- Sift first 5 ingredients into small bowl. Using electric mixer, beat butter in large bowl until fluffy. Gradually beat in sugar. Beat in vanilla extract.
- Add eggs 1 at a time, beating well after each addition. Add dry ingredients alternately with sour cream in 2 additions each, beating just until blended.
- Divide batter between prepared cake pans; smooth top. Bake until cakes begin to shrink from sides of pans, about 25 minutes. Cool cakes in pans on racks 5 minutes.
- Turn out cakes onto racks; peel off parchment. Turn cakes right side up onto racks and cool completely.
- Dissolve coffee powder in hot water in bowl. Add sour cream and whisk to blend. Melt chocolate in top of double boiler over simmering water, stirring until smooth. Add sour cream mixture to chocolate; whisk to blend. Remove from over water.
- Place 1 cake layer flat side up on platter. Immediately spread 1/2 cup frosting over. Top with second cake layer, flat side up. Spread top and sides with remaining frosting (If frosting becomes too stiff, place over warm water and stir until slightly softened.) Garnish cake with chocolate curls, if desired.
