Lady Baltimore Cake

Ingredients

  • 1 1/2 teaspoonsvanilla extract

Instructions

  1. Preheat oven to 375°F.
  2. Grease and lightly flour three 8-inch layer cake pans.
  3. In a bowl, sift the flour and measure it, then sift it again with the baking powder.
  4. In a large mixing bowl, cream the butter until it is soft, add the sugar gradually, beating continuously until light and fluffy.
  5. Add the dry ingredients alternately with the milk and vanilla, beginning and ending with dry ingredients, and beating well after each addition.
  6. In another bowl, beat the egg whites until stiff, but not dry, and fold them lightly into the batter.
  7. Fill the prepared cake pans evenly and smooth the top.
  8. Bake in the preheated oven for 25 minutes, or until the cakes are done (check with a toothpick).
  9. Cool the cakes in their pans for 5 minutes, then turn them out onto a rack and peel off the paper. Let them cool completely.
