Lady Baltimore Cake

Instructions
- Preheat oven to 375°F.
- Grease and lightly flour three 8-inch layer cake pans.
- In a bowl, sift the flour and measure it, then sift it again with the baking powder.
- In a large mixing bowl, cream the butter until it is soft, add the sugar gradually, beating continuously until light and fluffy.
- Add the dry ingredients alternately with the milk and vanilla, beginning and ending with dry ingredients, and beating well after each addition.
- In another bowl, beat the egg whites until stiff, but not dry, and fold them lightly into the batter.
- Fill the prepared cake pans evenly and smooth the top.
- Bake in the preheated oven for 25 minutes, or until the cakes are done (check with a toothpick).
- Cool the cakes in their pans for 5 minutes, then turn them out onto a rack and peel off the paper. Let them cool completely.
