Mom's Fish Soup

Ingredients

produce
  • 1 candiced tomatoes
  • 1 1/2onions(chopped)
  • 1/4lemon juice(of a lemon)
  • 3 clovesgarlic(finely chopped)
  • oregano(to taste)
  • thyme(to taste)
  • tarragon(to taste)
pantry staple
  • 1/3 cupolive oil
  • 1/4 cupketchup
  • worcestershire sauce
other
  • 1 cupwhite wine
  • 3 cupschicken broth

Instructions

  1. Saute onions and garlic in olive oil with oregano, thyme & tarragon to taste until good.
  2. Add chicken broth, white wine, diced tomatoes, ketchup, worcestershire sauce, and lemon juice.
  3. Let cook 15-30 mins on low flame.
  4. This can be done a day before or earlier in the day.
  5. Reheat to boiling, add any combination of fish or shellfish.
  6. Add clams & mussels & cover first, 5 mins.
  7. Add shrimp, 3 mins.
  8. Add calamari last just till heated 2-3 mins.
  9. Serve with croutons.

My notes

6/6/09 - Original recipe had "1 can diced tomatoes &", but "&" part is struck through. - Handwritten note: "Reheat to boiling add any combination of fish or shellfish approx 12 shrimp, 12 clams, 12 mussels & 2 cut up squid. Add clams & mussels & cover first, 5 mins. Add shrimp, 3 mins add calamari last just till heated 2-3 mins & serve with croutons." - "1/4" in "juice of 1/4 of a lemon" is written smaller and above the line. "1/3" is crossed out.
