Dan Dan Noodles For Two

  • 1 tspginger(grated)
  • spinach
  • 2garlic(grated)

  • 1/4 poundground pork

  • 2Asian noodles(good)
pantry staple
  • 1/2 tspsugar
  • 2 tbsplight soy sauce
  • 1 tbspChinese black vinegar
  • 2 tbspchili crisp
  • 2 tspsoy sauce
  • 2 tspShaoxing wine
  • 2 tbspChinese sesame paste
  • 2 tbspwater
  • 1 tbspYa Cai(minced)
  • 1 tspdried chile flakes
other
  • 1 tbsprape seed oil(roasted)

Instructions

  1. Mix together Chinese sesame paste, water, sugar, grated garlic, light soy sauce, Chinese black vinegar, and chili crisp. Set aside.
  2. Put the ground pork in a bowl, add soy sauce and Shaoxing wine, and mix well.
  3. Heat oil in a wok. Add the meat mixture, Ya Cai, ginger, and chile flakes. Stir fry until it becomes fragrant, brown, and crumbly.
  4. Cook two portions of good Asian noodles according to package directions.
  5. During the last minute of cooking, throw in a robust handful of spinach.
  6. Drain well and rinse.
  7. Toss the noodles with the sauce and meat topping.
  8. If you like, add fried peanuts, chopped scallions, and more chili crisp.
