Ingredients

- 1/2 cupparsley(chopped)
- 1/2 cupcilantro(chopped)
- 3 clovesgarlic(finely chopped)
- 1/2red onion(finely chopped)

- 1 lbground beef

- black pepper(to taste)
- 1 tspground cumin
- 1/4 tspturmeric
- 1 tspground coriander
- 2-3 tablespoonsextra virgin olive oil(plus more to drizzle over the pita before grilling)
- 1 1/2- 2 tspkosher salt(plus more to taste)
- 2 tspras el hanout
Instructions
- Mix the ground meat with the herbs, spices, garlic, onion, olive oil, kosher salt and cracked black pepper.
- Slice the pita in half and fill almost to the top with the meat mixture. Continue until all the ground meat is used up.
- Drizzle olive oil all over and rub on pita and meat until coated.
- Preheat your grill to medium high.
- Place the arayes meat side down on the top grill of the BBQ.
- Close the lid and let cook around 10-15 minutes. The heat from the grill will cook the arayes fully without charring the pita this way.
- Transfer to the bottom grill for a minute or two on each side to get some grill marks and then remove.
- Serve with garlicky tahini and zhug.
