Arayes

Ingredients

  • 1/2 cupparsley(chopped)
  • 1/2 cupcilantro(chopped)
  • 3 clovesgarlic(finely chopped)
  • 1/2red onion(finely chopped)

  • 1 lbground beef

  • 4pita
pantry staple
  • black pepper(to taste)
  • 1 tspground cumin
  • 1/4 tspturmeric
  • 1 tspground coriander
  • 2-3 tablespoonsextra virgin olive oil(plus more to drizzle over the pita before grilling)
  • 1 1/2- 2 tspkosher salt(plus more to taste)
  • 2 tspras el hanout

Instructions

  1. Mix the ground meat with the herbs, spices, garlic, onion, olive oil, kosher salt and cracked black pepper.
  2. Slice the pita in half and fill almost to the top with the meat mixture. Continue until all the ground meat is used up.
  3. Drizzle olive oil all over and rub on pita and meat until coated.
  4. Preheat your grill to medium high.
  5. Place the arayes meat side down on the top grill of the BBQ.
  6. Close the lid and let cook around 10-15 minutes. The heat from the grill will cook the arayes fully without charring the pita this way.
  7. Transfer to the bottom grill for a minute or two on each side to get some grill marks and then remove.
  8. Serve with garlicky tahini and zhug.
