Tiger Salad

Ingredients

  • cucumbers(thinly sliced)
  • 6scallions(thinly sliced on a diagonal)
  • cilantro(cut into 2 inches pieces)
  • 4 stalkscelery(thinly sliced on a diagonal)
pantry staple
  • 1 tablespoonrice vinegar(unseasoned)
  • 2 teaspoonsesame oil(toasted)
  • 1 teaspoonsesame seeds(toasted)
  • 1/4 teaspoonred pepper flakes(crushed)
  • Kosher salt(freshly ground)
  • pepper(freshly ground)

Instructions

  1. Whisk vinegar, oil, sesame seeds, and red pepper flakes in a large bowl. Add cilantro, celery, cucumbers, and scallions. Season with salt and pepper and toss to combine.
  2. Salad can be made 6 hours ahead. Cover and chill.

This cooling and refreshing salad—with cilantro standing in for the lettuce—is great alongside spicy foods.
