Ingredients

- ○cucumbers(thinly sliced)
- ○6scallions(thinly sliced on a diagonal)
- ○cilantro(cut into 2 inches pieces)
- ○4 stalkscelery(thinly sliced on a diagonal)

- ✓1 tablespoonrice vinegar(unseasoned)
- ○2 teaspoonsesame oil(toasted)
- ○1 teaspoonsesame seeds(toasted)
- ○1/4 teaspoonred pepper flakes(crushed)
- ○Kosher salt(freshly ground)
- ✓pepper(freshly ground)
Instructions
- Whisk vinegar, oil, sesame seeds, and red pepper flakes in a large bowl. Add cilantro, celery, cucumbers, and scallions. Season with salt and pepper and toss to combine.
- Salad can be made 6 hours ahead. Cover and chill.

This cooling and refreshing salad—with cilantro standing in for the lettuce—is great alongside spicy foods.
