Ingredients

  • 4 cupsfruit(sliced apples, peaches, pears, halved plums)

  • 1½ cupsall-purpose flour

  • ¼ cupsugar
  • ½ teaspoonsalt
  • ½ cupsugar
  • 1 teaspooncinnamon

Instructions

  1. Toss 1½ cups flour, sugar and salt to mix.
  2. Cut in butter with a pastry blender or two knives, until mixture looks like coarse meal.
  3. Beat egg yolk with milk, add to flour.
  4. Press dough against bottom and sides of a greased 8-inch square baking pan.
  5. Sprinkle with 2 tablespoons flour.
  6. Spread with fruit, sprinkle with sugar mixed with cinnamon, dot with butter.
  7. Bake in a hot oven (400°F) about 45 minutes, until crust is brown and fruit is tender.
  8. Variation: Use 3 cups drained canned fruit, reduce sugar topping to ¼ cup.
  9. Cream Topping: Beat 1 egg yolk with ¼ cup sour cream, pour over fruit after first 10 minutes of baking.

- Use whole range of flour. - May need more milk. - Use 1/2 cup sugar while baking others! Opt.
