Tomato and Citrus Salad

  • 1 tablespoonlemon juice(fresh)
  • 2oranges
  • 1red onion(halved and thinly sliced)
  • 12Kalamata olives(pitted, halved)
  • 4Roma tomatoes(ripe)

  • crusty bread(warm, for serving)
pantry staple
  • 1 teaspoonred chili flakes
  • 1 teaspoonsweet paprika
  • fine sea salt(to taste)
  • black pepper(to taste)
  • 1/4 cupolive oil(good quality)

Instructions

  1. Slice the tomatoes and oranges into rounds and arrange them on a serving platter.
  2. Scatter the sliced red onion and halved olives over the tomatoes and oranges.
  3. In a small bowl, whisk together the olive oil, lemon juice, red chili flakes, and sweet paprika.
  4. Drizzle the dressing over the salad.
  5. Season with fine sea salt and freshly ground black pepper to taste.
  6. Serve with warm crusty bread.
