Tomato, Caper & Celery Salad

Ingredients

- ○4tomatoes
- ○5celery(peeled and finely diced)
- ○1onion(finely chopped)

- ○5 tbspSignature Harissa
- ○1 tbspPreserved Lemon Paste
- ✓2 ozcapers(soaked in water to get rid of the saltiness)
Instructions
- Using a serrated peeler, peel the tomatoes. Cut in half and remove the seeds and liquid.
- Finely chop the tomatoes and place in a mixing bowl.
- Drain the capers, roughly chop, and add to the mixing bowl with the rest of the ingredients.
- Taste for salt and serve.

We recommend that customers who receive Preserved Lemon Paste with a more gel-like texture either blitz their desired amount in a blender or use a knife to gently run through the product on a cutting board until it reaches their desired texture.
