Vegan General Tso's Cauliflower

- ○4scallions(minced)
- ○1 tbspginger(minced or grated)
- ○5dried chiles
- ✓3 clovesgarlic(minced)

- ○2 quartsvegetable oil
- ○2 quartspeanut oil
- ○1 tbspsesame oil
- ✓1/2 cuphoisin sauce
Instructions
- Heat the vegetable or peanut oil in a large pot over medium-high heat until it reaches 350°F.
- In a separate pan, heat the sesame oil over medium heat.
- Add the garlic, scallions, and ginger to the sesame oil and sauté until fragrant.
- Add the dried chiles and hoisin sauce to the pan and stir to combine.
- Once the oil is hot, fry the cauliflower florets until golden brown and crispy.
- Remove the cauliflower from the oil and drain on paper towels.
- Toss the fried cauliflower in the sauce until well coated.
- Serve immediately, garnished with additional scallions if desired.
