Ingredients

- 2 canscanned sweet potatoes(drained)

- 4eggs
dairy
- 1/2whole milk(skim or whole)
- 3 cupsevaporated milk
pantry staple
- 1/2 tspcinnamon
- 1/4 tspnutmeg
- 1/4 tspallspice
- 1/3 cupbrown sugar
Instructions
- Using a food processor, puree potatoes till mashed. Add eggs and combine.
- Add 2 cans of evaporated milk till combined.
- Bake in preheated 350° oven till knife inserted into center comes out clean. 1-1 1/2 hrs.
- Can do ahead & reheat.
My notes
2015 adjustments for smaller amounts: 1 egg, 1/2 cup evap milk
2015: puree everything in a food processor. Bake 350°
2016 adjustment for sugar: Increase to 1/3cup brown sugar
2005: 3 eggs
2005 adjustment for evaporated milk: 3 cups (2 1/2 cans)
* additional instructions: optional 1 can recipe (1 can baked sweet potatoes)
