4 Ways to Preserve Fresh Herbs

Ingredients

  • 250 gbutter(plant based (any butter works))

Instructions

  1. Roughly chop your herbs.
  2. Spoon about 1 tsp into each ice cube tray compartment.
  3. Drench with olive oil leaving a tiny gap so they don’t overflow while freezing.
  4. Freeze and enjoy any time. They store for months in the freezer.
  5. Blend your herbs whole until you achieve a consistency you like.
  6. Add your salt and pulse a few times until fully incorporated.
  7. Tip the entire mixture onto a baking tray and leave it to dry in a well-aerated spot.
  8. Speed up the drying process by using your oven for 30-45 minutes at 230ºF/110ºC; time will vary depending on the herbs you use.
  9. Roughly chop your fresh herbs.
  10. Add them to a bowl with a bit of lemon zest.
  11. Add your butter and mix until fully incorporated.
  12. Add the butter to compostable cling film and roll tightly.
  13. Refrigerate and enjoy.
  14. Dehydrate herbs at low temperature or hang dry until crispy at the touch.
  15. Add to a jar including stems and leaves and cover with oil.
  16. Leave to infuse; it lasts for months on your shelves.
