Lion's Mane Mushroom Crab Cakes

  • 1/4 cuponion(finely chopped)
  • 1/4 cupcelery(finely chopped)
  • 1/4 cupred bell pepper(finely chopped)
  • 1 poundlion's mane mushrooms(cleaned and chopped)
  • 1 tablespoonlemon juice

  • 2 tablespoonsolive oil
  • 1 tablespoonDijon mustard
  • 1 tablespoonWorcestershire sauce
  • 1 teaspoonOld Bay seasoning
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 1/2 cupbreadcrumbs
  • 1/4 cupmayonnaise

Instructions

  1. Heat butter in a skillet over medium heat. Add the chopped lion’s mane mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Remove from heat and let cool.
  2. In a large bowl, combine the cooked mushrooms, onion, celery, red bell pepper, mayonnaise, egg, Dijon mustard, Worcestershire sauce, lemon juice, Old Bay seasoning, salt, and black pepper. Mix well.
  3. Stir in breadcrumbs until the mixture holds together. Form into patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties until golden brown on each side, about 3-4 minutes per side.
  5. Serve hot with your choice of sauce or garnish.

My notes

Lion’s mane mushrooms have a flavor and texture reminiscent of crab or lobster meat when cooked. Do not eat them raw.
