Lion's Mane Mushroom Crab Cakes

- ○1/4 cupred bell pepper(finely chopped)
- ○1 poundlion's mane mushrooms(cleaned and chopped)
- ○1 tablespoonlemon juice

- ○1/2 cupbreadcrumbs
- ✓1/4 cupmayonnaise
Instructions
- Heat butter in a skillet over medium heat. Add the chopped lion’s mane mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Remove from heat and let cool.
- In a large bowl, combine the cooked mushrooms, onion, celery, red bell pepper, mayonnaise, egg, Dijon mustard, Worcestershire sauce, lemon juice, Old Bay seasoning, salt, and black pepper. Mix well.
- Stir in breadcrumbs until the mixture holds together. Form into patties.
- Heat olive oil in a skillet over medium heat. Cook the patties until golden brown on each side, about 3-4 minutes per side.
- Serve hot with your choice of sauce or garnish.
My notes
Lion’s mane mushrooms have a flavor and texture reminiscent of crab or lobster meat when cooked. Do not eat them raw.
