Salmon with Crispy Marinated Artichokes

  • parsley(chopped)
  • canned artichokes
  • garlic
  • lemon
  • capers
protein
  • anchovies
  • salmon(skin on)

  • olive oil

Instructions

  1. Marinate canned artichokes with herbs, acid, olive oil, and salt.
  2. Cook canned artichokes in a pan with olive oil until crispy.
  3. Prepare Italian salsa verde with chopped parsley, anchovies, capers, garlic, and lemon.
  4. Sear the salmon until crispy.
  5. Spoon the marinated artichokes and their juices over the salmon.
