Caramelized Tomato Tarte Tatin

- ✓1 tablespoonbalsamic vinegar
- ·2 tablespoonsolive oil

Instructions
- Preheat the oven to 400°F (200°C).
- In a 10-inch ovenproof skillet, heat olive oil over medium heat.
- Add balsamic vinegar, sugar, salt, and pepper, stirring until sugar dissolves.
- Add cherry tomatoes and cook, stirring occasionally, until they begin to caramelize, about 10 minutes.
- Remove from heat and let cool slightly.
- Roll out puff pastry on a lightly floured surface to smooth out any creases.
- Place puff pastry over the tomatoes, tucking in the edges.
- Bake in the preheated oven until the pastry is golden brown, about 25-30 minutes.
- Remove from oven and let cool for 5 minutes.
- Carefully invert the tart onto a serving plate.
- Serve warm with dollops of ricotta and drizzles of pesto.

This tart is best served warm, but can also be enjoyed at room temperature.
