Caramelized Tomato Tarte Tatin

  • 1 1/2 poundscherry tomatoes

  • 1/2 cupricotta cheese

  • ·black pepper
  • 1 tablespoonbalsamic vinegar
  • ·2 tablespoonsolive oil

  • 1/4 cuppesto

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a 10-inch ovenproof skillet, heat olive oil over medium heat.
  3. Add balsamic vinegar, sugar, salt, and pepper, stirring until sugar dissolves.
  4. Add cherry tomatoes and cook, stirring occasionally, until they begin to caramelize, about 10 minutes.
  5. Remove from heat and let cool slightly.
  6. Roll out puff pastry on a lightly floured surface to smooth out any creases.
  7. Place puff pastry over the tomatoes, tucking in the edges.
  8. Bake in the preheated oven until the pastry is golden brown, about 25-30 minutes.
  9. Remove from oven and let cool for 5 minutes.
  10. Carefully invert the tart onto a serving plate.
  11. Serve warm with dollops of ricotta and drizzles of pesto.

My notes

This tart is best served warm, but can also be enjoyed at room temperature.
