Instructions

  1. Prepare a 9x5-inch loaf pan by lining it with parchment paper. Preheat your oven to 350°F (175°C).
  2. Mix the sugar with the citrus zest using your fingers for a fragrant sugar base.
  3. Whisk in the yogurt, eggs, and olive oil until smooth.
  4. In another bowl, combine the flour, baking powder, and salt. Fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely before removing it from the pan.
