Salted Peanut Butter Cookies

  • 2eggs(large, at room temperature)

  • 1 3/4 cupslight brown sugar(packed)
  • 1 3/4 cupspeanut butter(smooth)
  • sea salt(to finish, coarse-grained)

  • 1/2 teaspoonvanilla extract

Instructions

  1. Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper.
  2. In a medium bowl, whisk together the light brown sugar and eggs until smooth.
  3. Whisk in the vanilla extract, then the peanut butter until smooth and completely incorporated.
  4. If you'd like to get those pretty striations across the top of the cookies, chill the dough.

My notes

The dough should have the consistency of Play-Doh, but it may be thinner and softer.
