The Latke King from Hanukkah Heights

Ingredients

  • 2yellow onions(small to medium)
  • 4russet potatoes(large (about 2 lbs))

  • 2eggs

  • 1/2 cupsour cream
grain
  • 2-3 tbspmatzo meal
pantry staple
  • kosher salt(to taste)
  • canola or vegetable oil(for frying)
  • finishing salt(like Maldon Sea Salt)

  • apple sauce(for serving)
  • 1/2 cupschmaltz(or duck fat)

Instructions

  1. Peel and grate the potatoes and onions.
  2. Squeeze out excess moisture from the grated mixture.
  3. In a large bowl, combine the potatoes, onions, eggs, sour cream, and matzo meal.
  4. Season the mixture with kosher salt to taste.
  5. Heat a mix of schmaltz and oil in a frying pan over medium-high heat.
  6. Spoon small amounts of the latke mixture into the pan, flattening them slightly.
  7. Fry until golden brown and crispy on both sides.
  8. Drain on paper towels and sprinkle with finishing salt.
  9. Serve with additional sour cream and apple sauce.

These latkes are intentionally petite to maximize the crispy exterior.
