Ingredients

- 2yellow onions(small to medium)
- 4russet potatoes(large (about 2 lbs))

- 1/2 cupsour cream

- 2-3 tbspmatzo meal

- kosher salt(to taste)
- canola or vegetable oil(for frying)
- finishing salt(like Maldon Sea Salt)

- apple sauce(for serving)
- 1/2 cupschmaltz(or duck fat)
Instructions
- Peel and grate the potatoes and onions.
- Squeeze out excess moisture from the grated mixture.
- In a large bowl, combine the potatoes, onions, eggs, sour cream, and matzo meal.
- Season the mixture with kosher salt to taste.
- Heat a mix of schmaltz and oil in a frying pan over medium-high heat.
- Spoon small amounts of the latke mixture into the pan, flattening them slightly.
- Fry until golden brown and crispy on both sides.
- Drain on paper towels and sprinkle with finishing salt.
- Serve with additional sour cream and apple sauce.
