Weeknight Steak and Rice Noodle Salad

Ingredients

  • Napa cabbage
  • cucumbers
  • daikon
  • lime juice
  • mint

  • vegetable oil

Instructions

  1. Chop and mash serrano chiles with a garlic clove on a cutting board.
  2. Stir the chile-garlic mixture into lime juice, honey, and vegetable oil to make a sauce.
  3. Marinate the steak in the sauce for ten minutes.
  4. Cook the rice noodles according to package instructions.
  5. Slice Napa cabbage, cucumbers, and daikon.
  6. Salt and massage the vegetables to release water, then drain.
  7. Cook the marinated steak until it takes on a charred appearance.
  8. Thinly slice the cooked steak.
  9. Combine the sliced steak with remaining dressing, noodles, vegetables, chopped mint, and peanuts.
